Over the years, I have tried many butter chicken recipes to find that one perfect recipe that I will not have to modify anymore. My search has come to an end with this mouth watering and flavorful recipe. The creamy texture and the silky smooth look will definitely leave our guests drooling. Ingredients:<br />
Boneless chicken- 2lb- cut into small cubes<br />
Butter- half cup<br />
Onions- 1 finely chopped<br />
Tomatoes- 2 finely chopped<br />
Red chilli powder- 1 tspn<br />
Garam masala powder- 1 tspn<br />
Sugar-1/2 tspn<br />
Kasoori methi- 1 tspn<br />
Garlic paste- 1 tspn<br />
Ginger paste- 1 tspn<br />
Cashews- 3 tblspn(grind into a smooth paste)<br />
Cream- 3 tblspn<br />
Tomato Ketchup- 1 tblspn<br />
Coriander leaves- 1 tblspn chopped<br />
Salt to taste<br />

Method of Preparation:<br />
Marinate the chicken pieces with red chilli powder, garam masala powder half of ginger garlic paste and salt and keep aside for 30 mins.<br />
Heat oil in a pan and fry the marinated chicken pieces and keep aside.<br />
In the same pan, add some butter and onion and saute for 5 mins.Add tomatoes, grinded cashew paste, ginger garlic paste and 1/2 cup water and simmer for 15 mins with the lid closed.<br />
Once the mix is simmered, let it cool and then blend into a fine paste. I used the regular juice blender.<br />
Now add this finely mixed paste into the pan and heat it. Add the chicken pieces, cream, ketchup, butter and kasoori methi and sugar and cook for 5 mins.<br />
Garnish with coriander leaves and serve hot with Naan or Rice.<br />

Shredded cabbage- 1 cup<br />
Shredded carrot- 1 cup<br />
Mayonaisse - 4 tblspn<br />
Pepper powder- a pinch<br />
Extra virgin olive oil- 1 tblspn<br />
Salt to taste<br />

Bread pockets:<br />
Bread slices - 6<br />
Eggs- 2<br />
Bread crumbs- 1 cup<br />

Method of preparation :<br />
Heat oil in a pan and add the shredded carrots and cabbage into it. Add salt and pepper powder and saute for 5 mins.Turn off the flame. Add Mayonnaise, mix well and keep aside.<br />
<br />
Cut each slice of bread into a round shape using a mold or any round shaped lid. Keep the bread pieces remaining after that to be used later to make bread crumbs. Repeat this step for all the other 5 slices of bread. Make bread crumbs from all remaining bread pieces and keep aside.<br />
<br />
Beat eggs in a bowl.Take two disc shaped bread pieces and keep one on top of each other. Dip in the egg mix and then dip in bread crumbs. Gently press the two bread pieces together so they stick together.<br />
<br />
Heat oil in a wok and deep fry the bread slices till golden brown.<br />
<br />
Cut each fried bread into half. We will get a bread pocket. Fill each pockets with the filling and yummy bread pockets are ready to be served.<br />

Cumin seeds - 1 tspn<br />
Cloves- 5<br />

Ghee- 3 tblspn<br />

Method of Preparation:<br />
Heat ghee in a pan and add cumin seeds to it.When they splutter add garlic,cloves, turmeric powder and chilli powder. Saute for 2 mins and add the chopped kale and carrots. Cook for 5 mins and set aside.<br />
In the same pan/pot, add basmati rice and cook in the regular method by adding salt and water. When the rice is half way through add the cooked kale and carrot mix and saute well.Cook till all the water is absorbed and the rice becomes fluffy. Garnish with some coriander leaves.<br />
Serve with Raita and pickle or your favourite curry dish. I loved it with mutton stew.<br />

Add the nicely washed shrimp and cook for 10 mins in medium flame.<br />
Garnish with coriander leaves and mint leaves.<br />

Marinate the steak with extra virgin olive oil, pepper, ginger garlic paste, parsley flakes,lime juice and salt and refrigerate for 5 hrs.<br />
In a pan brown the marinated steak on both sides till it turns brown.<br />
Preheat the oven to 365 degree. In a baking dish, transfer the contents from the pan and add some olive oil on top. Cover with aluminium foil andBake for 1 hour.<br />
In a bowl, add bbq sauce, rosemary and olive oil and transfer the contents on top of the baking dish. Bake unwrapped for 20 mins.<br />

Water- 5 cups<br />
Beetroot- 4 cups(diced)<br />

Ginger garlic paste- 1 tblspn<br />
Kashmiri Red chilli powder - 2 tspn<br />
Cumin powder- 1 tspn<br />
Extra virgin olive oil- 2 tblspn<br />

Method of Preparation:<br />
Heat oil in a pan and add mustard seeds to it.When they splutter, add beets, beans. ginger garlic paste, chilli powder, cumin powder and salt and saute for 10 mins.Add little water only if needed.<br />
In a separate pan add basmati rice and water and cook till the rice is almost done.Mix the beets and beans mix to it and mix well.Garnish with coriander leaves and serve hot.<br />

Wash the minced meat well and drain and keep aside till the entire water is completely drained.</div>

Yesterday was the perfect weather for BBQ and we did our first BBQ of this summer. There is nothing wonderful than having a nice and creamy dessert after a fun filled BBQ dinner. This chocolate avocado mousse was the prefect solution for that. No cleaning of extra bowls, no baking dishes involved. All you need is a food processor, some nice and ripe avocados and my all time favourite ingredient -cocoa powder. And this is one dessert that I am never guilty of having more:) Loved it!</div>

Method of preparation:<br />
Preheat oven to 375 F.<br />
Meanwhile cook the pasta as per package instructions. In a different saucepan add the butter, salt , pepper and garlic paste and saute' the mushrooms, asparagus, and chicken pieces.<br />
Drain the pasta and keep aside. In a bowl, add the cooked asparagus, mushrooms, chicken, cream of mushroom and 1 cup of cheese and mix well.<br />
Take a casserole dish and pour the entire contents of the bowl into the baking dish. Sprinkle the remaining one cup of cheese on top of it and spread evenly.<br />
Bake the dish at 375 F for 35-45 minutes till there is a nice light golden colour on the top.<br />

Heat oil in a pan and add the chopped onions to it.When they become golden brown in colour add green chillies, ginger garlic paste, chilli powder, turmeric powder, coriander powder, cumin powder and salt and saute for 5 minutes.<br />
Let this mixture cool for sometime and then grind into a fine paste and pour it back to the pan.Puree the tomatoes and add into the onion mixture.Now cook this mixture till the oil separates for around 5-8 minutes in medium heat. Now add some water and cook for 5 minutes.<br />
Grind the cashews into a smooth paste and add to the pan.Add the paneer cubes, garam masala, cream and coriander leaves and saute for 5 minutes.Add the butter and turn off the flame<br />
Delicious paneer butter masala is ready to serve.<br />

Method of preparation:<br />
Dry roast cloves, bay leaves, green cardamom, black peppercorns, cinnamon, coconut, red chillies,cumin and coriander seeds and salt. Turn off the flame when you start getting the nice aroma.Cool it for sometime and then blend all this together in a blender or coffee grinder.<br />
In a bowl, add two tblspn of water , chilli powder , turmeric powder and the blended ingredients and mix well.Add this to the chicken pieces and marinate for atleast 15 minutes.<br />
Meanwhile, heat oil in a pan and add the finely chopped onion to it.Saute till the onion turns medium brown in colour.Now add ginger garlic paste.<br />
Add the marinated chicken pieces and very little water if needed.Cook on medium flame till the chicken is well done.Add lime juice and garnish with coriander leaves and serve hot.<br />

Ingredients :<br />
Whole wheat or white bread- 4 slices<br />
Green Cabbage- 1/2 cup(shredded)<br />
Red/Purple Cabbage - 1/2 cup(shredded)<br />
Baby spinach- 1/2 cup<br />
Spinach dip/Vegetable dip- 1 tblspn<br />
Turmeric powder- a pinch<br />
Black pepper powder- a pinch<br />
Extra virgin olive oil- 1 tspn<br />
Vegetable oil- 1 tblspn(for cooking the cabbage)<br />
Salt to taste<br />

Method of preparation:<br />
Heat the vegetable oil in a pan and add the shredded green and red cabbage.Add salt and turmeric powder and saute for 5 minutes.Meanwhile toast the bread in a toaster or pan and keep aside.<br />
In a bowl, add the spinach, spinach dip, cabbage, pepper powder, olive oil and salt and mix well.<br />
Spread the mixture on each slice of bread and close it with the other half.Hot and healthy sandwiches are ready to be served.<br />

Method of Preparation:<br />

In a bowl, add all the ingredients from 1-13 and required amount of water and knead into a smooth dough.Keep aside for 15 minutes.<br />
Make small balls and roll into parathas of medium thickness(Use required amount of flour dusting while rolling the parathas).Please make sure you don't roll the parathas too thin.<br />
Heat oil in a pan and cook the parathas on both sides by adding oil on each side. (Use of butter or ghee while cooking the parathas, definitely enhances the flavor, but if you are calorie conscious pls feel free to use oil).<br />
Serve hot with raita and pickle.<br />

Tips:<br />
You can use raw cabbage or cooked cabbage for this recipe.I have used raw cabbage. However if you don't like the raw smell of cabbage, please saute the cabbage in a pan adding 1 tblspn oil, salt and a pinch of turmeric powder for 5-8 minutes.You can then use the cooked cabbage to mix with the wheat flour.<br />
If you are using raw cabbage, pls be careful about the amount of water you add while mixing the wheat flour as cabbage releases some water.<br />

Method of Preparation:<br />
Preheat the oven to 350 F . Toast the bread slices in a pan till its slightly brown in colour on both sides.<br />
In a bowl, add the cheese, tomatoes, green chillies, garlic paste, coriander leaves,olive oil, pepper and salt and mix well.<br />
Spread the mix evenly on each slice.In a baking tray , place the bread slices and bake till the cheese melts and the bread slices gets crisp.(usually takes around 6-8 minutes).<br />
Serve hot with tomato ketchup.<br />

Method of Preparation:<br />
1.Layer the cake in the trifle bowl in a single layer.<br />
2.Layer one tin of custard evenly on top of it.<br />
3.Now layer it with fruits of your choice. In this recipe I evenly distributed strawberries, raspberries, pineapple and blueberries.On top of this spread a thin layer of cool whip.Add a layer of chipits on it.<br />
4.Repeat steps 1-3 again in the same pattern except the addition of pineapple juice.Depending on the size of your trifle dish you can repeat it one more time. I usually do it two times and my trifle dish will be full by that time.<br />
5.Finally add the cool whip as a thick layer and make it even.On top of this add the remaining berries and kiwi in a style of your choice.Add the jelly in a style of your choice on the sides or in the centre.<br />
6.Refrigerate for atleast 6 hours before serving.<br />

Curry leaves- 1 stem<br />

Coconut oil- 2 tblspn<br />
Coriander leaves - to garnish<br />

Method of Preparation<br />
Heat oil in a pan and add the mustard seeds and curry leaves to it.<br />
When the mustard seeds splutter add the onions and green chillies and saute for 10 minutes till onion turns light brown in colour.<br />
Add the ginger garlic paste, pepper powder, coriander powder, peppercorns and green mango and saute for 5 minutes.<br />
Add the kudampuli with less than half cup of water and cook till the mixture starts to boil.<br />
Now add the fish pieces, cover the lid and cook in medium heat till the fish is cooked.Add more water only if needed. You can always adjust the amount of pepper added just before turning off the heat.<br />
Garnish with coriander leaves and serve hot.<br />

Appam is a form of pancake whose main ingredient is rice and coconut. Its a light dish and is best for breakfast with egg curries/stew. Here I present a variation of appam, that is quick and easy to make and can be had all by itself. Yes friends, you heard it right, you don't even need a curry to go with this dish.<br />

Method of preparation:<br />
Prepare appam batter as you regularly make.<br />
Heat the appam pan and pour the appam batter in the pan.Close the lid<br />
After around 2 minutes,remove the lid and pour an egg just on top of the appam(Just like you make bulls eye) and allow the appam to cook well.Feel free to add salt and pepper on top just like you do for the bulls eye.<br />

This is a spicy and aromatic fish curry that you will definitely love.Fish curries has always been a must have for lunches in kerala. This simple and spicy fish curry cooked in a man chatti(earthen pot) is definitely a seafood lovers delight. This time when we went for our India vacation, I made sure we bought a chatti back with us.To be honest I was not sure if the chatti will reach back safely as its a very delicate pot.Luckily it reached safely and this is the first curry I tried in this pot. I must say,fish curries prepared in manchattis definitely increases the flavor and adds an authentic touch as well.<br />
My favourite ingredient in this dish is kudampuli which adds a refreshing flavor to the dish.<br />

Cooking time: 30 minutes<br />
Serves- 6<br />
Ingredients:<br />

Fish- 2 lb<br />
Onions- 1 medium<br />
Tomato- 1<br />
Chilli powder-2-3 tspn<br />
Mustard seeds- 1 tspn<br />
Fenugreek seeds- 1/4 tspn<br />
Curry leaves- 1 stem<br />
Ginger garlic paste- 1 tspn<br />
Kudam puli(Cocum) - 3<br />
Coconut oil- 2 tblspn<br />

Method of preparation:<br />
Heat oil in a manchatti. Add the mustard seeds, fenugreek seeds and curry leaves into it.When they splutter add the onions and tomato into it.<br />
When the onions are cooked, add salt , ginger garlic paste and chilli powder and cook for 10 minutes in medium flame.<br />
Add kudampulli and less than half cup of water to the chatti .When the mixture starts boiling add the fish pieces into it.Close with a lid and cook for around 10-15 minutes.<br />
Serve hot with rice, appam or tapioca.<br />

Ingredients:<br />
Egg- 6 (boiled and cut into half)<br />
Onions- 3 <br />
Green chillies- 4(always can increase or decrease depending on your spice level).<br />
Ginger garlic paste- 1 tspn<br />
Curry leaves- 1 stem<br />
Coriander powder- 2 tspn<br />
Turmeric powder- a pinch<br />
Garam Masala- 1 tspn<br />
Salt to taste<br />
Coriander leaves-finely chopped<br />
Coconut oil - 2-3 tblspn<br />

Method of preparation.<br />
Boil the eggs and keep aside.<br />
Heat oil in a pan and add the curry leaves into it.Add the onions and green chillies and cook till the onion turns light brown.<br />
Add ginger garlic paste, coriander powder, turmeric powder and salt and cook till everything mixes well. Add very little water if needed. Turn off the heat and keep this mixture aside for cooling.<br />
Now grind this mixture, by adding very little water) and make it into a fine paste.<br />
Add this mixture back to the pan , add garam and mix well.Add required amount of water to achieve your desired consistency.<br />
Add the egg pieces and coriander leaves and cook for 5 minutes.<br />
Yummy and spicy egg curry is ready to serve.<br />
