Its a beautiful rainy day here and whats better than to have an hot an creamy chicken casserole for dinner. Days like these when you feel like curling up on the couch in your cozy pajamas and listen to some nice music, this one pot meal is the best.
Prep- 10 minutes
Cooking time : 35-45 minutes
Pasta - cooked as per package instructions(3 cups). (Use any pasta of your choice.I used penne pasta)
Cream of mushroom - 1 tin
Asparagus- 2 cups- finely chopped
Mushrooms- 2 cups- small pieces
Garlic paste- 1 tspn
Chicken - 2 cups- cut into small pieces(I always use left over chicken for casserole. If you don't have leftover chicken, cook small pieces of boneless chicken with some salt, pepper and vegetable oil and use them)
Pepper- a pinch
Salt to taste
Butter- 2 tblspn
Method of preparation:
Preheat oven to 375 F.
Meanwhile cook the pasta as per package instructions. In a different saucepan add the butter, salt , pepper and garlic paste and saute' the mushrooms, asparagus, and chicken pieces.
Drain the pasta and keep aside. In a bowl, add the cooked asparagus, mushrooms, chicken, cream of mushroom and 1 cup of cheese and mix well.
Take a casserole dish and pour the entire contents of the bowl into the baking dish. Sprinkle the remaining one cup of cheese on top of it and spread evenly.
Bake the dish at 375 F for 35-45 minutes till there is a nice light golden colour on the top.
