Chicken Kolhapuri

Chicken kolhapuri is an aromatic curry dish filled with flavors.What makes this curry so delightful is the addition of fresh and roasted spices.The dish gets its name from the beautiful town called Kolhapur in the south western part of india. The best thing about cooking this dish is, it fills you home with a vibrant and fresh spicy aroma.

Prep time- 5 minutes
Cooking time- 20 minutes
Serves- 6

Chicken- 2 lb- cut into medium pieces
Onions- 2 medium sized- finely chopped
Clove- 8
Star anise- 2
Bay leaf- 2
Green cardamom- 2
Black peppercorns- 1/2 tspn
Coriander seeds- 1 tspn
Cumin seeds- 1 tspn
2" cinnamon stick
Shredded coconut- 2 tblspn
Ginger garlic paste- 1 tblspn
Red chillies- 4
Chilli powder- 2 tspn
Turmeric powder- a pinch
Lime juices- 1 tblspn
Vegetable oil- 2 tblspn
Salt to taste
Coriander leaves- to garnish

Method of preparation:
Dry roast cloves, bay leaves, green cardamom, black peppercorns, cinnamon, coconut, red chillies,cumin and coriander seeds and salt. Turn off the flame when you start getting the nice aroma.Cool it for sometime and then blend all this together in a blender or coffee grinder.
In a bowl, add two tblspn of water , chilli powder , turmeric powder and the blended ingredients and mix well.Add this to the chicken pieces and marinate for atleast 15 minutes.
Meanwhile, heat oil in a pan and add the finely chopped onion to it.Saute till the onion turns medium brown in colour.Now add ginger garlic paste.
Add the marinated chicken pieces and very little water if needed.Cook on medium flame till the chicken is well done.Add lime juice and garnish with coriander leaves and serve hot.

I love this dish with garlic naan or plain basmati rice.
