In the winter months, there is always time for a nice little hot sandwich.Here I have a wonderful stuffing for an appetizing and flavorful sandwich with the goodness of cabbage and the healthy flavor of spinach. This combined with a glass of orange juice makes a light and healthy breakfast.
Prep time- 5 mins
Cooking time - 5 mins
Whole wheat or white bread- 4 slices
Green Cabbage- 1/2 cup(shredded)
Red/Purple Cabbage - 1/2 cup(shredded)
Baby spinach- 1/2 cup
Spinach dip/Vegetable dip- 1 tblspn
Turmeric powder- a pinch
Black pepper powder- a pinch
Extra virgin olive oil- 1 tspn
Vegetable oil- 1 tblspn(for cooking the cabbage)
Salt to taste
Method of preparation:
Heat the vegetable oil in a pan and add the shredded green and red cabbage.Add salt and turmeric powder and saute for 5 minutes.Meanwhile toast the bread in a toaster or pan and keep aside.
In a bowl, add the spinach, spinach dip, cabbage, pepper powder, olive oil and salt and mix well.
Spread the mixture on each slice of bread and close it with the other half.Hot and healthy sandwiches are ready to be served.
