Spicy Egg Curry (Ande Ki Curry)

Wish you all A Very Happy New Year. Just back from a beautiful vacation from India and all set for my first post for the new year. A simple and spicy egg curry. I love this curry best with Appams.

Cooking time : 15 minutes
Serves- 4

Egg- 6 (boiled and cut into half)
Onions- 3
Green chillies- 4(always can increase or decrease depending on your spice level).
Ginger garlic paste- 1 tspn
Curry leaves- 1 stem
Coriander powder- 2 tspn
Turmeric powder- a pinch
Garam Masala- 1 tspn
Salt to taste
Coriander leaves-finely chopped
Coconut oil - 2-3 tblspn

Method of preparation.
Boil the eggs and keep aside.
Heat oil in a pan and add the curry leaves into it.Add the onions and green chillies and cook till the onion turns light brown.
Add ginger garlic paste, coriander powder, turmeric powder and salt and cook till everything mixes well. Add very little water if needed. Turn off the heat and keep this mixture aside for cooling.
Now grind this mixture, by adding very little water) and make it into a fine paste.
Add this mixture back to the pan , add garam and mix well.Add required amount of water to achieve your desired consistency.
Add the egg pieces and coriander leaves and cook for 5 minutes.
Yummy and spicy egg curry is ready to serve.
