Kaaju Methi Chicken

Cooking time: 20 minutes
This is a recipe shared by my friend. It tastes so good, that I thought its worth sharing with my blogger friends.

Chicken- 2 lb small pieces

Onion- 2 large finely chopped

Tomato- 1 finely chopped

Green chillies – 3

Turmeric powder-1/2 tspn

Coriander powder- 2 tspn

Black pepper powder: 2 tblspn(or more depending on your spice level)

Ginger garlic paste-1 tspn

Garam masala-  a pinch

Kasoori Methi-1/2 tspn

Vegetable oil- 2 tblspn

Salt to taste

Cashews- around 20 pieces made into a fine paste by adding very little water

Method of preparation:

Heat oil in a pan and add the chopped onion, green chilli and salt and sauté for 10 mins till its golden brown.

Add tomato, ginger garlic paste, coriander powder, turmeric powder and pepper powder and saute for 5 minutes till the onions and tomato form into a smooth mix. Add little water only if needed.

Add the chicken pieces and cook for 10 minutes-15 minutes or till the chicken gets cooked. Add little water only if needed.

Reduce the flame, add the grinder cashew paste and kasoori methi and cook for 2 minutes.
