Mandhi rice can be prepared in different ways and tastes different and good in every different style. Below I am describing my version of the rice which is very quick and easy and can easily be an extra main course for any party or family gathering. I have also added very little oil to make it a healthier version.
Cooking time: 30 minutes
Basmati Rice- 3 cups(Soaked in water for 20 minutes and drained)
Shan Mandhi Rice mix- One Sachet
Coriander leaves- finely chopped to garnish
Garam masala- 1/2 tspn
Green chillies- 4 finely slit
Garlic paste- 2tspn
Extra virgin Olive Oil
Method of preparation:
Dissolves Shan Mandhi rice mix in half cup water and marinate the chicken prices with it and keep aside for 30 minutes.
In a pot some 2 tblspn of oil and add the chicken pieces, green chillies, garlic paste and garam masala and sauté for 5 minutes. Add enough water for the chicken to cook and cook the chicken in medium flame for 10 minutes.
Now add the well washed rice directly to the same pot, add little salt and water(enough for the rice to cook) and cook chicken and rice together for around 10 minutes by covering with a lid and the rice is well done.
Garnish with Coriander leaves and serve hot.
