Kerala Style Egg Curry

Cooking time: 20 minutes
Serves - 4

Eggs - 6
Onions -2 large sized
Tomato - 2
Mustard seeds - 1/2 tspn
Red chillies- 3
Curry leaves - 1 stem
Chilli powder - 1 tspn
Green chillies - 4
Turmeric powder - 1/2 tspn
Ginger garlic paste - 1 tspn
Coriander leaves to garnish
Water - 1/3 cup
Refined oil - 2 tblspn
Salt to taste

Method Of Preparation

1.Boil the eggs and keep aside.
2.Heat oil in a pan and add the mustard seeds, curry leaves and red chillies to it.
3.When they crackle add the onions, tomatoes,green chilli and salt and saute well.
3.Add ginger garlic paste, turmeric powder,chilli powder and water and cook for 10 minutes in medium heat.
4.Switch off the flame and add the sliced eggs and mix well
5.Garnish with coriander leaves and serve hot.
