Malabar Chicken Stew


Cooking time :30 minutes
Serves : 6

Ingredients

Chicken - 1 kg
Onion - 3 medium size
Potato - 2
Tomato - 1
Green chillies - 8
Pepper - 1 tspn
Turmeric powder - 1/2 tspn
Coriander powder - 2 tablespoon
Cardamon - 3
Bay leaves - 2
Cloves -3
Cinnamon stick - 1" stick
Coconut milk - 1 tin
Garlic paste - 1 tspn
Ginger paste - 1 tspn
Water - 1/2 cup
Salt to taste
Coriander leaves - to garnish
Extra virgin olive oil - 2 tblspn

Method Of Preparation

1.Heat oil in a pan.Add the bay leaves, cinnamon stick, cardamon and cloves.Add onion and green chillies and saute for 10 minutes.Add garlic paste ,ginger paste and potatoes and saute for 2 minutes.
2.Add coriander powder, turmeric powder and pepper powder and salt and saute for 5 minutes.Add the washed chicken pieces and tomatoe and saute well.
3.Add water and saute till the chicken gets cooked.Add coconut milk and simmer for 5 minutes.
4.Garnish with coriander leaves and serve hot.Tastes best with Ghee Rice.
