Elavan(Ashgourd) Curry

Cooking time :25 minutes
Serves :4


Ashgourd(Elavan) - 2 cups(Chopped)
Onion - 1
Tomato - 1
Yoghurt- 1/2 cup
Turmeric powder - 1/2 tspn
Coriander powder - 2 tspn
Green chillies - 4
Ginger paste - 1/2 tspn
Garlic paste - 1 tspn
Mustard seeds - 1 tspn
Extra virgin olive oil - 2 tblspn
Salt to taste

Method of Preparation

1.Cook the chopped elavan with turmeric powder, salt and water and keep aside.
2.Heat oil in a pan and add the mustard seed to it.When they splutter add onions, garlic paste, ginger paste and green chillies and saute for 10 minutes.
3.Add tomato and cooked elavan and cook for 5 minutes.Add the beaten yogurt and little water and cook for 10 minutes in low flame.The elavan curry is ready to serve.
