Black eye peas - 1 cup(soaked overnight)
Onions - 2
Tomato - 1
Cumin Seeds - 1 tspn
Chilli powder - 2 tspn
Garam Masala - 1 tspn
Turmeric powder - 1/2 tspn
Bay leaves - 2
Lime juice - 1 tblspn
Extra Virgin Olive Oil - 2 tblspn
Salt to taste
Method of Preparation :
1.Mix the black eyed peas with turmeric powder and salt and pressure cook and keep aside.
2.Heat oil in a pan and add the chopped onions, garlic paste, ginger paste and salt and saute for 10 minutes.
3.Add chilli powder, garam masala, turmeric powder,bay leaves and cumin seeds and saute for 5 minutes.
4.Add the cooked black eye peas and tomato and saute for 5 minutes.
5.Add little water and cook well.
6.Garnish with coriander leaves and serve hot.
